SWORDFISH WITH 3 PEPPER SAUCE

Serving Size: 8

INGREDIENTS

    · 1  Each  Red Bell Pepper -- chopped
    · 1  Green Bell Pepper -- chopped
    · 1  Yellow Bell Pepper -- chopped
    · 2  Tablespoons  Shallots -- chopped

    · 1  Cup  White wine
    · 1/2  Cup  Clam Juice or Fish Stock
    · Tabasco Sauce -- to taste
    · Oregano -- to taste
    · White Pepper -- to taste
    · Salt -- to taste

    · 1/2  Red Bell Pepper, julienne
    · 1/2  Green Bell Pepper, julienne
    · 1/2  Yellow Bell Pepper, julienne
    · Brandy -- to taste
    · Pepper -- to taste

    8   Each  Swordfish Steaks


DIRECTIONS

[1) Sauté Peppers & Shallots.....PUREE, use a little wine if needed.

[2) Reduce WINE, FISH STOCK & SEASONINGS until starting to thicken..     ADD TO STEP ONE

[3) Sauté very slightly the julienne Peppers with Brandy and Pepper for garnish.

[4) Grill Swordfish steak; place sauce on plate, then fish on sauce, then top with julienne Peppers.
