SWORDFISH WITH 3 PEPPER SAUCE Serving Size : 8
1 Each Red Bell Pepper -- chopped 1 Green Bell Pepper -- chopped 1 Yellow Bell Pepper -- chopped 2 Tablespoons Shallots -- chopped ----- ----- 1 Cup White wine 1/2 Cup Clam Juice or Fish Stock Tabasco Sauce -- to taste Oregano -- to taste White Pepper -- to taste Salt -- to taste ----- ----- 1/2 Each Red Bell Pepper -- julienne 1/2 Green Bell Pepper -- julienne 1/2 Yellow Bell Pepper -- julienne Brandy -- to taste Pepper -- to taste
8 Each Swordfish Steaks
[1) Sauté Peppers & Shallots.....PUREE, use a little wine if needed.
[2) Reduce WINE, FISH STOCK & SEASONINGS until starting to thicken.. ADD TO STEP ONE
[3) Sauté very slightly the julienne Peppers with Brandy and Pepper for garnish.
[4) Grill Swordfish steak; place sauce on plate, then fish on sauce, then top with julienne Peppers.
