SNAPPER OR DOLPHIN RANGOON Servings: 3
3 Portions Mahi-Mahi (Dolphin) or Snapper
-----Marinade----- 1/4 Cup Olive Oil 1 1/2 Teaspoon Worcestershire Sauce 1 1/2 Teaspoon Lemon Juice 1 1/2 Teaspoon Orange Juice 1/8 Teaspoon White Pepper
-----RANGOON SAUCE----- 1 Cup Bananas -- sliced 1 Cup Pineapple -- sliced 1 Cup Papaya -- sliced 3 Tablespoons Butter 2 Tablespoons Parsley -- chopped 3 Tablespoons Lemon Juice Allspice Cinnamon
Marinate fish for 15 minutes. Flour and egg wash if desired.....Saute or grill fish. SPRINKLE lightly with Cinnamon and Allspice when done. Quickly sauté fruit slices in Butter, add lemon juice and parsley to finish. Top fish with sauce to serve.
This is also excellent with Snapper.
