LOBSTER RISSOLES ("The Settlement" Cook-Book, 1903)
Mince the lobster meat, pound the coral and add it, grated onion, salt, cayenne. Add grated yolks of three hard-boiled eggs. Make a batter of two tablespoons milk, one tablespoon flour and one egg. Beat well together and mix the above with it. Roll into balls and fry.
