ALMOND-SWEET RED PEPPER RELISH A great sauce for grilled fish. Serving Size : 6
-----Step One----- 1 cup Red Bell Pepper -- diced 1/2 cup Onion -- chopped 1/2 tablespoon Garlic -- minced 1/8 cup Olive oil -----Step Two----- 1/2 cup Almonds -- chopped coarse 3/4 cup Fresh Tomatoes -- diced 1/2 tablespoon Red Wine Vinegar 1 1/2 tablespoons Fresh Basil -- chopped Salt -- to taste Pepper -- to taste Lemon Juice -- to taste
[1) Sauté ingredients in Step One until vegetables are just beginning to soften.
[2) Stir in ingredients in Step Two. Remove from heat.
